Gastronomi Turizmi Bağlamında Yiyecek-İçecek İşletmelerinin Tutumu (İstanbul Örneği)

Turizm sektörünün dünya çapında her geçen gün gelişmesi bireysel turizm hareketlerinden kitle turizminin ulusal ve uluslararası boyutta farklılaşarak kişi ve/ya kişilerin farklı turizm hareketlerine yönelmesi kaçınılmaz bir hal almıştır. Sürdürülebilir turizm hareketlerinin dinamiği için alternatif turizm türleri arasında son yıllarda çok fazla önemli bir yere sahip gastronomi turizmi bireylerin gelir artışları farklılaşma istekleri yeni tatlar tatma arzuları farklı kültürlere sahip değişik ürün seçenekleri ile büyük oranda ivme kazanmıştır. Turizme önem veren ülkelerin, yöresel ve geleneksel hale gelmiş yiyecek-içecek ve gastronomi kültürlerini ön sıralara koyarak turizm gelirlerinin artışında önemli bir paya sahip olması için çabaları gastronomi turizminin gelişmesine ortam hazırlamaktadır. Bu bağlamda yerli ve yabancı turistlerin gittikleri destinasyonlarda, gastronomi turizmine verdikleri önem karşısında turizm ve yiyecek-içecek işletmeleri de tesislerinde gastronomi unsurlarına ayrı bir önem vermektedirler. Bu nedenle; turizm ile ilgili tüm kurum ve kuruluşlar ayrı bir öneme ve özelliğe sahip gastronomi turizminin daha da etkili ve etkin bir hal alabilmesi açısından farklı bir takım çalışmalar ve faaliyetler sürdürmekte yenilikler getirmektedir.

The tourism which was developed over the last years becomes the most important sector in the world. Internationally tourism sector was changed at micro and macro dimension. For dynamics of sustaining tourism, gastronomy tourism has been accelerated among alternative sorts of tourism because of its popular aspect of curiosity to novelty and appetite. The nations to give importance of tourism started to put the gastronomy sector into their tourism system already. Moreover, they are investing budgets in the gastronomy tourism more and more. With connecting to this topic, jobs and facilities concatenated from gastronomy tourism sector are doing resarch for novelty of tourism sectors and considering sustainable tourism system.In the material and mental gain of view,development of gastronomy tourism is inevitable in the future. The importance. Because of this phenomenon, associations and organizations connected with gastronomy sector are doing research for novelty of tourism sectors and considering sustainable tourism system.
